These Pumpkin Streusel Muffins are the best treat for fall. They are soft, tasty, and have a lovely cinnamon streusel crumble on top. You can eat them as a snack or with a cup of coffee.
Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 1/2 cup brown sugar, packed. 1 teaspoon baking soda. 1/2 teaspoon baking powder. 1/2 teaspoon salt. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1/4 teaspoon ground cloves. 1/4 teaspoon ground ginger. 1/2 cup unsalted butter, melted. 1 cup canned pumpkin puree. 2 large eggs. 1 teaspoon vanilla extract. For Streusel Topping:. 1/4 cup all-purpose flour. 1/4 cup granulated sugar. 1/4 cup old-fashioned rolled oats. 3 tablespoons unsalted butter, cold and cubed. 1/2 teaspoon ground cinnamon.
Instructions: Preheat your oven to 375F 190C. Line a muffin tin with paper liners or grease the cups. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, baking powder, salt, and spices cinnamon, nutmeg, cloves, and ginger. In a separate bowl, whisk together the melted butter, pumpkin puree, eggs, and vanilla extract until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay. In a small bowl, prepare the streusel topping by mixing together the flour, granulated sugar, rolled oats, cold cubed butter, and ground cinnamon. Use a fork or your fingers to create a crumbly texture. Fill each muffin cup about 2/3 full with the pumpkin batter. Sprinkle the streusel topping evenly over the muffin batter in each cup. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Ingredients: 2 cups gluten-free baking mix. 1/2 cup granulated sugar. 1/2 cup unsalted butter, melted. 1 cup sour cream. 2 large eggs. 1 teaspoon vanilla extract. 1/2 cup packed brown sugar. 1/2 cup gluten-free oats. 1 teaspoon ground cinnamon. 1/4 cup chopped pecans or walnuts optional.
Instructions: Warm the oven up to 175F 350C. Prepare a 9-inch square baking dish by greasing it. Put gluten-free baking mix and granulated sugar in a large bowl and mix them together. Add the sour cream, eggs, vanilla extract, and melted butter. Stir until everything is well mixed. Mix brown sugar, gluten-free oats, cinnamon, and chopped nuts if using in a different bowl. Once the baking pan is ready, spread half of the batter into it. Put half of the streusel mix on top of the batter. Carefully spread the rest of the batter over the streusel layer, and then add the rest of the streusel mixture on top. After the oven is hot, bake it for 30 to 35 minutes, or until a toothpick stuck in the middle comes out clean. For 10 minutes, let the coffeecake cool in the pan before you serve it.

Almost every afternoon around the 4:00pm hour, my grandma Lucy would make a pot of coffee and serve a little slice of a freshly baked sweet treat to whomever was around. Sometimes this was my grandpa Herbert, home from the firehouse, or her sisters stopping by for a chat in their Chicago neighborhood or friends who were staying with them from out of town. Sometimes Lucy baked these desserts herself, sometimes Herbert did, and sometimes they purchased them from the local German bakery in their neighborhood. Pastries, coffee cake, doughnuts, pound cake, crullers, Black Forest cake, turnovers, danishes... the desserts rotated on a weekly basis, but the routine never faltered throughout most of her adult life. Even when they went on vacation. During this small break in the day, Lucy would socialize with her sisters or play a game of cards with her visitors or chat about life with Herbert before they got busy again doing stuff around the house or getting dinner ready. After Lucy passed away in 1980, my grandpa still carried on this tradition every afternoon for the next 14 years of his life. I love everything about this. The baking, the life-long tradition, the relaxing respite. Last year and the first half of this year were so stressful I’m looking forward to clinging to all activities that promote joy, relaxation and tender in these coming months months and years. In celebration of this new found enlightenment, of the long weekend, of these two lovebirds and their coffee hour tradition, I made @marthastewart cinnamon streusel coffee cake yesterday.
