These delicious Marshmallow Cookies with Hot Chocolate are ideal for chilly winter days. Encased in a soft and chewy cookie, they blend the decadent tastes of hot chocolate with the lusciousness of marshmallows and chocolate chips. It tastes just like a cookie-shaped cup of hot cocoa!
Ingredients: 1 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 teaspoon vanilla extract. 2 cups all-purpose flour. 1/2 cup unsweetened cocoa powder. 1 teaspoon baking soda. 1/2 teaspoon salt. 1 cup chocolate chips. 1 cup mini marshmallows. 1/2 cup crushed graham crackers.
Instructions: Turn the oven on to 350 degrees Fahrenheit 175 degrees Celsius and line a baking sheet with parchment paper. Beat the softened butter and granulated sugar in a sizable mixing bowl until the mixture is light and fluffy. One egg at a time, adding and beating thoroughly after each addition. Add the vanilla extract and stir. Mix the flour, baking soda, cocoa powder, and salt in a different bowl. Mixing until thoroughly blended, gradually add the dry ingredients to the wet ingredients. Add the mini marshmallows, chocolate chips, and crushed graham crackers and stir to form a cookie dough that tastes like hot chocolate. Leaving space between each cookie, drop spoonfuls of the cookie dough onto the baking sheet that has been prepared. For 10 to 12 minutes, or until the edges are set but the centers are still slightly soft, bake in a preheated oven. Take the cookies out of the oven and allow them to cool for a few minutes on the baking sheet before moving them to a wire rack to cool down completely.
