Cowboy Caviar Dip is a colorful and flavorful appetizer featuring a medley of beans, vegetables, and zesty dressing. It's perfect for parties, potlucks, or snacking!

Ingredients: 1 can 15 ounces black beans, drained and rinsed. 1 can 15 ounces black-eyed peas, drained and rinsed. 1 cup corn kernels fresh, canned, or frozen. 1 red bell pepper, diced. 1/2 red onion, finely chopped. 1 jalapeno pepper, seeded and finely chopped. 1/4 cup chopped fresh cilantro. 1/4 cup lime juice. 2 tablespoons olive oil. 1 teaspoon cumin. Salt and pepper to taste. Tortilla chips, for serving.

Instructions: In a large mixing bowl, combine the black beans, black-eyed peas, corn, red bell pepper, red onion, jalapeno pepper, and cilantro. In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper. Pour the dressing over the bean mixture and toss until well combined. Cover and refrigerate for at least 30 minutes to allow the flavors to meld. Before serving, taste and adjust seasoning if necessary. Serve chilled with tortilla chips.
