1 - 12 oz. can tuna, water pack, drained
2 - 3 T. mayonnaise - no sugar added type
1 t. hot curry powder
1 lg. apple, cored, diced with skin
¾ c. celery, diced
Option: 2/3 c. chopped almonds extra crunch
In a large bowl, thoroughly mix all ingredients. Serve on a bed of greens. It’s just that easy.

These were soooo yummmmmy! As soon as we ate them I wanted to run back to the store to get more jicama to make more! I got this recipe from Low Carb Yum, check out their other recipes too! Ingredients: *2 cups jicama sliced (about 1/2-1 inch thick. they shrink in the baking process) *2 tablespoons olive oil *3/4 teaspoon sea salt divided *1 teaspoon onion powder *1 teaspoon cumin *1 teaspoon smoked paprika *1 teaspoon chili powder *1 teaspoon oregano *1 teaspoon adobo light *1 teaspoon black pepper Instructions: *Pregeat oven to 400F. *Peel jicama and slice into french fry pieces. (I got mine already sliced at Trader Joe's!) *Sprinkle 1/2 teaspoon sea salt into medium pot of water. Bring to a boil. *Boil jicama fries in boiling water for 10 minutes. *Drain in colander. *Place drained jicama pieces into a large mixing bowl. Coat with olive oil, then sprinkle on 1/4 teaspoon sea salt, and the rest of the spices. *Blend in spices. *Spread fries onto oiled baking pan. *Bake at 400°F for 30 minutes, turning halfway through baking time, until fries are crisp. *Enjoy!! It's adult because it's Alfredo 😉and it's practically Zero Carbs! Ingredients: *1 Tablespoon Salted Butter *2 Cloves of Garlic, Minced *1/2 Cup of Heavy Cream (We use Trader Joe's, it has zero carbs) *1/4 Cup of Shaved Parmesan Cheese *1 Tablespoon Dried Parsley *1 Package of Shiritaki Noodles, Macaroni Shaped *2 Teaspoons Better Than Boullion, Vegetable *1 Hot Dog (We love Applegate Organic) *5 Fresh Small Mozzarella Balls, Shredded Instructions: *In a small pot boil the hot dog and then slice it up. *In another small pot (or the same one when the hot dog is done) bring the Better Than Boullion and about a cup of water to a boil. *Open, drain, and rinse the Shiritaki noodles. Make sure to really rinse them good, in hot water. *Boil the noodles for 2-3 minutes in the broth water then drain. *In a small frying pan add the butter and garlic to medium high heat. Once incorporated add the Heavy Cream, than Cheese, and Parsley. Stir with a small spatula. Let it simmer for a few minutes. Stir so it doesn't stick or burn. You might need to turn the heat down to medium. *Add the hot dog and noodles. Let it simmer for a few more minutes to soak up the flavor. Keep stirring. *Add the fresh mozz pieces and stir once, let it simmer for less than 1 minute. *Enjoy! I felt like having mac and cheese like in my "eat unhealthy and make sure it's pasta 5 times a day" years. This was so good and every ingredient is either no carb or very low carb! The Shiritaki is an acquired taste but I have come to love them when I prep them right! They have no seaweed flavor and they soak up the broth they are boiled in! Mix well until the ingredients are well mixed and the mixture feels like dough. In an 8x8-inch baking dish that has been lined, press the mixture down firmly. Spread out the coconut oil that has been melted on top. Put the dish in the fridge for at least an hour so that it can set. Cut into bars and enjoy once it's done!
