These grilled Steak and Veggie Zucchini Boats are good for you and taste great. Fill zucchini "boats" with tender steak and a mix of colorful vegetables. Grill until done, then top with melted mozzarella cheese for an extra layer of decadence.
Ingredients: 2 medium zucchinis. 1/2 pound steak, thinly sliced. 1/2 red bell pepper, diced. 1/2 yellow bell pepper, diced. 1/2 onion, finely chopped. 2 cloves garlic, minced. 1/2 cup shredded mozzarella cheese. 1 tablespoon olive oil. Salt and pepper to taste. 1 teaspoon Italian seasoning. Fresh parsley for garnish.
Instructions: Preheat your grill to medium-high heat. Slice each zucchini in half lengthwise and scoop out the center to create 'boats'. Brush the zucchini boats with olive oil and season with salt and pepper. In a skillet over medium heat, saut the sliced steak until it's cooked to your desired level of doneness. Remove from heat and set aside. In the same skillet, add a bit more olive oil if needed and saut the onion and garlic until translucent. Add the diced bell peppers and Italian seasoning to the skillet. Saut until the peppers are tender. Stuff each zucchini boat with the cooked steak and vegetable mixture. Sprinkle shredded mozzarella cheese over the top of each zucchini boat. Place the stuffed zucchini boats on the preheated grill and close the lid.
