honestly, as a disabled person, potatoes are a lifesaver.
I can't eat most foods b/c they trigger flare ups & so shopping and cooking are a dizzying, time consuming nightmare.
But what's fast to make, low effort, high calorie & delicious???

Since becoming disabled, cooking has been incredibly difficult. I'm by myself most days, so any small batch recipe I can find that's easy and inexpensive is like gold. So I thought I'd share some with you...written in adhd format 😂
Microwave Chocolate Chip Oatmeal Cookies
In microwave safe mixing bowl, melt 1 stick butter or margarine
Add two caps full vanilla, 1/2 cup brown sugar, couple shakes of salt, and 1 egg. Mix well.
Add 3/4 cup flour, 3/4 cup instant oatmeal (microwave packets don't work properly), stir well.
Add 1/2 cup chocolate chips (or however much you want. We measure chocolate with our heart)
Divide into around six parts. I spoon mine onto squares of parchment paper and stack. Parchment, cookie, parchment, cookie. Then put in a ziplock bag and store in fridge or freezer.
To cook, put in a bowl and microwave on high for 45 seconds.
Then, viola! Hot fresh chocolate chip cookie whenever you like.

okay so genuine question: would anyone be interested in me posting my recipe book? It’s dyspraxia/processing disorder friendly, has ideas for when you’re low on spoons, and has a few illustrations (mostly bc I’ve been effectively bed bound since April w/ chronic pain but we move lmao). If it would be helpful to anyone I’d be happy to share it

PSA: if you're disabled and pretty sick of canned heat up meals, see if you can spice them up a bit!
I've been eating the same canned tomato soup for a long time and recently I started adding in some milk, just a bit at the start of the process.
Then today I dumped in a bunch of dried basil too and it immediately got so much better.
Dried herbs don't expire, to my knowledge, so they're so good to buy a bunch of in advance and then use where necessary. Dumping matching herbs into your food can make dinner a lot better!
