Ingredients: 4 cups sweet corn kernels. 1 cup diced potatoes. 1/2 cup diced onions. 1/2 cup diced celery. 3 cups vegetable broth. 1 cup milk. 2 tablespoons butter. 2 tablespoons all-purpose flour. 1/2 teaspoon thyme. 1/2 teaspoon paprika. Salt and pepper to taste. Chopped fresh parsley for garnish.
Instructions: In a large pot, melt butter over medium heat. Add onions and celery, saut until softened. Stir in flour, thyme, and paprika, cook for 2 minutes. Gradually whisk in vegetable broth, ensuring no lumps. Add potatoes and bring to a simmer, cook until potatoes are tender. Stir in sweet corn and milk, simmer for an additional 5 minutes. Season with salt and pepper to taste. Serve hot, garnished with chopped parsley.
