Dinner last night was delicious fresh crab linguine - after all we are staying by the seaside 🦀🏖! The chillies I added were very mild so even Teddy ate his chopped up mini version - it took a few goes at the crab before deciding he liked it though 😋. ~ Ingredients: 150g dried linguine 3 tbsp olive oil 2 cloves garlic, finely chopped 1 fresh red chilli (mild), finely chopped 2 tbsp white wine vinegar 200g (approx) white and brown crabmeat Juice of half a lemon Large handful flat-leaf parsley, finely chopped ~ Directions: 🌿 Bring a large pan of water to the boil and add the linguine. Cook as per the packet instructions, stirring occasionally so it doesn’t stick. 🌿While the pasta cooks, heat 3 tbsp of olive oil with the garlic and chilli in a large pan. Cook the chilli and garlic very gently for a minute, then add the white wine vinegar and simmer for another minute. Remove from the heat and add the brown crabmeat, stirring to make a thick sauce. 🌿 When the pasta is cooked, lift it from the water and add it to the large pan to combine with the sauce. 🌿 Off the heat, add the lemon juice, parsley and white crabmeat to the pasta with a grind of fresh black pepper.
