With these inspired cookies based on Eva Bakes' cranberry bliss bars, you can indulge in the delightful combination of cranberries, white chocolate, and macadamia nuts.
Ingredients: 1 cup all-purpose flour. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1/2 cup packed light brown sugar. 1/3 cup granulated sugar. 1 large egg. 1 teaspoon vanilla extract. 1/2 cup dried cranberries. 1/2 cup white chocolate chips. 1/4 cup chopped macadamia nuts.
Instructions: Preheat the oven to 350F 175C and line a baking pan with parchment paper. In a small bowl, whisk together the flour, baking soda, and salt. In a larger bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the dried cranberries, white chocolate chips, and chopped macadamia nuts. Spread the cookie dough evenly in the prepared baking pan, pressing it down gently. Bake for about 15-18 minutes, or until the edges are golden brown. Remove from the oven and let the cookies cool in the pan for a few minutes before transferring to a wire rack to cool completely. Once cooled, you can optionally drizzle melted white chocolate on top for extra decoration. Cut the cookie slab into bars and enjoy!
