Kale Chips
Directions
-Preheat the oven to 350 degrees F. Arrange 3 oven racks evenly spaced in the oven.
-Lay each kale leaf on a board and, with a small sharp knife, cut out the hard stem. Tear large leaves in half. Place the kale in a large bowl of water and wash it well. Drain the kale and dry it in a salad spinner. Dry the bowl, and put the kale back in the bowl.
-Toss the kale with the olive oil, 1 teaspoon kosher salt, and 1/2 teaspoon pepper. Divide the kale among 3 sheet pans or roast them in batches. If you put too much kale on one pan, it will steam rather than roast and will never become crisp. Roast for 15 minutes, until crisp. Alternately, add chickpea and rice flour to make kale tempura.

Recipe of the Week: Parsnip and Almond Mash with Crispy Kale and Roasted Vegies
This is a bit of a collection of little bits and pieces that are really nice and something a little bit out of the ordinary.
Bunch of Kale
2 Parsnips
2 Carrots
6 Button Mushrooms
Salt
Olive Oil
Whole Cumin Seeds
Slivered Almonds - Handful
Method:
Parsnip Mash: Peal and wash your parsnip, cutting off the hard stemmed end. Place in a pot of water and boil until soft. Drain water and return to the pot, mash the parsnip adding a small knob of butter (you could also puree this). Add your handful of slivered almonds for a little bit of texture and extra flavour and serve.
Crispy Kale: Preheat oven to 220 degrees. De-stem the kale and cut into small sections. Add kale to a bowl and drizzle with a tablespoon olive oil and toss to coat the surface of the leaves. You may need a little extra olive oil. One coated leave for 5 minutes before giving a good sprinkle of salt over the bowl and again toss to combine. Add to a baking tray and place in the oven to cook for approximately 10-15 minutes. Check regularly and turn with tongs after 8 minutes.
Roast Mushrooms and Carrots: I am sure cumin carrots have made an appearance hear before but our final couple of vegetables got a sprinkle of olive oil and cumin seads before being baked in the oven for 15 minutes.
Serve with your choice of protein or other main and enjoy. My personal favourite was the kale or the parsnips!
