These oven-baked pakoras are a healthier take on the traditional deep-fried version. Packed with the goodness of broccoli and onions, they are crispy on the outside and tender on the inside, making them a perfect snack or appetizer.
Ingredients: 1 cup chickpea flour. 1/4 cup rice flour. 1 teaspoon baking powder. 1/2 teaspoon turmeric powder. 1 teaspoon cumin seeds. 1 teaspoon coriander powder. 1/2 teaspoon chili powder. Salt to taste. 1 cup broccoli florets, chopped. 1 onion, thinly sliced. 1/4 cup chopped fresh coriander leaves. 1/4 cup water. Cooking spray or oil for greasing.
Instructions: Preheat oven to 200C 400F. In a large mixing bowl, combine chickpea flour, rice flour, baking powder, turmeric powder, cumin seeds, coriander powder, chili powder, and salt. Add broccoli, onion, and fresh coriander leaves to the dry mixture. Mix well. Gradually add water and mix until you get a thick batter-like consistency. Line a baking tray with parchment paper and lightly grease with cooking spray or oil. Drop spoonfuls of the batter onto the prepared tray, spacing them apart. Bake in the preheated oven for 20-25 minutes, or until the pakoras are golden and crispy. Remove from the oven and let cool slightly before serving. Enjoy your delicious broccoli & onion pakoras!
