Pancharatan Dal is a Rajasthani style dal made my mixing 5 different types of dal. Raita is one dish that complements the meal in taste, flavor and nutrition. Ingredients 1/4 cup Arhar Dal 1/4 cup Hari Moong Dal 1/4 cup Kali Urad Dal 1/4 cup Chana Dal 1/4 cup Masoor Dal Salt to taste 1/2 tsp Turmeric Powder 6 cups Water 1/4 cup Ghee 1/4 tsp Hing 1 tsp Jeera 3-4 Dry Red Chilies 1 cup Onion Chopped 1 tbsp Garlic Chopped 2 tsp Ginger Grated 2 Green Chilies Chopped 2 tbsp Fresh Coriander chopped 1 tbsp Lemon Juice For Raita 4 cup curd 1 chopped tomato 1 chopped onion 1 chopped cucumber 2 tbsp finely chopped coriander 2 tbsp roasted jeera powder Rock salt as required 1 tbsp sugar 2 tbsp black pepper powder Instructions 1. Mix all the dals in a bowl and wash them well. 2. Add the dals in a pressure cooker. 3. Add water, salt and turmeric powder. 4. Pressure cook until dal is cooked nicely or cook for 2 whistles. 5. Heat ghee in a pan. 6. When the ghee is hot, add hing, jeera and dry red chilies and fry for a few seconds. 7. Add onion, green chilli, garlic and ginger and fry until onion turns brown. 8. Pour the tadka over the cooked dal and mix well. 9. Let it boil for 5 minutes . 10. Add lemon juice and garnish with fresh coriander. 11. Serve hot with roti or rice. For Raita 1. Whisk curd till smooth. 2. Add all the ingredients and mix well. 3. Garnish with fresh coriander leaves. 4. Serve chilled raita with dal.
