This creamy and tasty Gluten-Free Dairy-Free French Onion Dip is great for parties or as a snack. It's vegan, paleo, and Whole30-friendly because it's made with caramelized onions and a creamy sauce made from cashews.
Ingredients: 2 large yellow onions, thinly sliced. 2 tbsp olive oil. 1/2 tsp salt. 1/4 tsp black pepper. 1 cup raw cashews, soaked in water for 4 hours or overnight. 1/4 cup water. 2 tbsp lemon juice. 1 clove garlic, minced. 1/4 tsp onion powder. 1/4 tsp dried thyme. 1/4 tsp dried parsley. 1/4 tsp dried dill. Salt and pepper to taste.
Instructions: Put olive oil in a pan and heat it over medium-low heat. Add the sliced onions and cook, stirring every now and then, for about 20 to 25 minutes, until the onions turn caramelized. Add pepper and salt. Soaked cashews, water, lemon juice, minced garlic, onion powder, thyme, parsley, and dill should all be put into a blender. Mix until it's creamy and smooth. Put the mixed ingredients in a bowl and add the caramelized onions. To taste, add more salt and pepper to the food. Put the dip in the fridge for at least an hour before you serve it so the flavors can mix. You can eat it with chips, vegetable sticks, or gluten-free crackers of your choice.
