Pumpkin Chicken Curry

A flavorful and gluten-free curry with a delightful combination of eggplant, red pepper, and spinach. This aromatic dish is perfect for a healthy and satisfying meal.
Ingredients: 1 large eggplant, diced. 2 red bell peppers, sliced. 3 cups fresh spinach leaves. 1 onion, finely chopped. 3 cloves garlic, minced. 1-inch piece of ginger, grated. 2 tablespoons olive oil. 1 can 14 oz diced tomatoes. 1 can 14 oz coconut milk. 2 tablespoons gluten-free curry powder. 1 teaspoon ground turmeric. 1 teaspoon ground cumin. 1 teaspoon paprika. Salt and pepper to taste. Fresh cilantro leaves for garnish.
Instructions: In a large pan or skillet, heat the olive oil over medium-low heat. Add the chopped onion and cook for about three minutes, until the onion turns clear. Add the grated ginger and minced garlic. Cook for another minute or two until the food smells good. Add the diced eggplant and red bell peppers and stir them in. Cook for 5 to 7 minutes, until the vegetables start to get soft. The ground cumin, turmeric, paprika, salt, and pepper should all be added now. Make sure to mix the vegetables well so that the spices cover them. Add the coconut milk and diced tomatoes with their juice. Bring everything together to a simmer. Turn down the heat, cover, and let the curry cook slowly for 15 to 20 minutes, or until the eggplant is soft and the sauce gets thick. Add the new spinach leaves and stir them in. Cook for about two to three minutes, until they wilt. If you need to, taste and change the seasonings. Hot gluten-free eggplant, red pepper, and spinach curry should be served with fresh cilantro leaves on top. Have fun with your tasty gluten-free curry!
