This homemade spicy ramen with tofu is a comforting and flavorful dish perfect for chilly days. The combination of aromatic spices, savory tofu, and slurpy noodles will warm you up from the inside out.
Ingredients: 4 cups vegetable broth. 2 cups water. 2 packs ramen noodles. 1 block firm tofu, cubed. 2 tbsp sesame oil. 4 cloves garlic, minced. 1 tbsp ginger, minced. 2 tbsp soy sauce. 2 tbsp sriracha sauce. 2 green onions, thinly sliced. 1 cup sliced mushrooms. 1 cup spinach leaves. Salt and pepper to taste.
Instructions: Set the sesame oil on medium heat in a large pot. Put in the minced garlic and ginger, and cook until the smell is nice. Add the water and vegetable broth, and then bring it to a boil. Add tofu, soy sauce, and sriracha sauce once the water starts to boil. Let the flavors mix for 5 minutes while it simmers. In the meantime, cook the ramen noodles according to the directions on the package. While the soup is still cooking, add spinach and sliced mushrooms. Add pepper and salt to taste. Put the cooked noodles into bowls for serving. Pour the hot tofu broth over the noodles. Add green onions as a garnish. Enjoy while hot!
