Ingredients: 1 block extra-firm tofu, pressed and cubed. 2 tablespoons soy sauce. 2 tablespoons maple syrup. 2 tablespoons rice vinegar. 1 tablespoon sesame oil. 2 cloves garlic, minced. 1 tablespoon grated ginger. 1 tablespoon sriracha sauce. 1/4 cup peanut butter. 2 tablespoons water. 2 cups mixed vegetables bell peppers, broccoli, carrots. 2 tablespoons chopped peanuts. Cooked brown rice, for serving. Green onions, for garnish.
Instructions: In a small bowl, whisk together soy sauce, maple syrup, rice vinegar, sesame oil, garlic, ginger, sriracha, peanut butter, and water to make the sauce. In a large skillet or wok, heat some oil over medium-high heat. Add tofu cubes and cook until browned on all sides. Remove tofu from the skillet and set aside. In the same skillet, add mixed vegetables and stir-fry until tender-crisp. Return tofu to the skillet, pour in the sauce, and toss everything together until well coated and heated through. Serve the spicy peanut tofu stir-fry over cooked brown rice, garnished with chopped peanuts and green onions.
