Ingredients: 2 cups mixed greens. 1 cup cherry tomatoes, halved. 1/2 cucumber, sliced. 1/4 red onion, thinly sliced. 1/4 cup Kalamata olives, pitted. 1/4 cup feta cheese, crumbled. 2 tablespoons extra virgin olive oil. 1 tablespoon balsamic vinegar. Salt and pepper to taste.
Instructions: Mix the mixed greens, cherry tomatoes, cucumber, red onion, and Kalamata olives together in a large bowl. To make the dressing, mix the olive oil and balsamic vinegar in a small bowl with a whisk. Pour the dressing over the salad and mix it all together. Add the crumbled feta cheese on top of the salad. Add pepper and salt to taste. Serve right away and enjoy!
