This Mediterranean couscous salad is a refreshing and flavorful dish that combines fluffy couscous with a medley of fresh vegetables, tangy olives, and crumbled feta cheese. The zesty dressing ties everything together, making it a perfect side dish or light meal.
Ingredients: 1 cup couscous. 1 1/4 cups water. 1/4 cup extra-virgin olive oil. 2 tablespoons lemon juice. 2 cloves garlic, minced. 1 teaspoon ground cumin. Salt and black pepper to taste. 1 cup cherry tomatoes, halved. 1 cup cucumber, diced. 1/2 cup red bell pepper, diced. 1/2 cup red onion, finely chopped. 1/2 cup Kalamata olives, pitted and sliced. 1/2 cup feta cheese, crumbled. 1/4 cup fresh parsley, chopped. 1/4 cup fresh mint leaves, chopped.
Instructions: Bring 1 1/4 cups of water to a boil in a saucepan. Add the couscous, mix it in, put a lid on top, and take it off the heat. Wait five minutes. Cook the couscous and then use a fork to fluff it up. Move it to a large bowl to cool down. Whisk the lemon juice, ground cumin, salt, and black pepper into the olive oil in a small bowl. This will make the dressing. Add the dressing to the cooled couscous and mix it all together. Chop up the red onion, red bell pepper, cucumber, cherry tomatoes, feta cheese, fresh mint leaves, and fresh parsley and add them to the couscous. Combine everything. Put the Mediterranean couscous salad in the fridge at least 30 minutes before you serve it. Enjoy! Serve cold.

Ingredients: 1 sheet of puff pastry. 200g 7oz of bacon, thinly sliced. 2 large onions, thinly sliced. 200ml 7oz of heavy cream. 2 eggs. Salt and pepper to taste. A pinch of nutmeg. Fresh thyme leaves for garnish.
Instructions: Set the oven temperature to 200C 392F. To stop the puff pastry sheet from inflating excessively while baking, place it on a baking tray covered with parchment paper and puncture it with a fork. Cook the bacon in a frying pan over medium heat until crispy. Take out and let dry on paper towels. Add the thinly sliced onions to the same pan with the bacon fat and saut for about 15 minutes, or until they are soft and caramelized. Add some nutmeg, salt, and pepper for seasoning. Evenly distribute the caramelized onions over the puff pastry. Over the onions, scatter the crispy bacon. Whisk the eggs and heavy cream together in a bowl. A small pinch of salt and pepper will season. Over the bacon and onions on the puff pastry, pour the cream and egg mixture. Bake for 20 to 25 minutes, or until the filling is set and the tart is golden brown, in a preheated oven. Serve hot and garnish with fresh thyme leaves. Ingredients: 200g Korean glass noodles. 150g beef sirloin or ribeye, thinly sliced. 1 small carrot, julienned. 1 red bell pepper, thinly sliced. 1 yellow bell pepper, thinly sliced. 1 onion, thinly sliced. 2 cloves garlic, minced. 2 tablespoons vegetable oil. 2 tablespoons soy sauce. 1 tablespoon sugar. 1 tablespoon sesame oil. 1 tablespoon vegetable oil for cooking beef. Salt and pepper to taste. Toasted sesame seeds optional, for garnish. Green onions optional, for garnish.
Instructions: Soak the Korean glass noodles in warm water for about 20 minutes, or until they become soft and pliable. Drain and set aside. In a bowl, mix the thinly sliced beef with 2 tablespoons of soy sauce, minced garlic, and a pinch of black pepper. Let it marinate for 15-20 minutes. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Stir-fry the marinated beef until it's cooked through, then transfer it to a plate and set aside. In the same pan, add another tablespoon of vegetable oil and saut the onions, carrots, and bell peppers until they start to soften. Add the drained glass noodles to the pan and stir-fry for a few minutes until they are heated through. Return the cooked beef to the pan and toss everything together. Sprinkle 1 tablespoon of sugar over the ingredients and stir-fry for an additional 2-3 minutes until the noodles become slightly caramelized. Drizzle 1 tablespoon of sesame oil over the Japchae and mix well. Season with salt and pepper to taste. Garnish with toasted sesame seeds and green onions if desired. Serve hot and enjoy!
