*Egg curry* Recipe: Ingredients - 3/4 eggs (boiled), refined oil/Desi ghee, pinch of asafeotida (hing), 1 bay leaf (tej patta), 1 small cinnamon stick (dalchini), 2 green cardamom (eliachi), 2 cloves (laung), 2-3 black pepper balls, 1 tbsp cumin seeds, 1" ginger, 4 cloves of garlic, 1 medium sized onion, 2 medium sized tomato, 1 green chilli, 1/2 tbsp turmeric powder, 1/2 tbsp coriander powder, 1/4 tsp red chilli powder, 1/4 tbsp sabzi Masala, salt to taste, coriander leaves for garnishing. Method - 1. Take boiled eggs and prick them randomly. In a pan take some oil and saute these eggs till golden. Keep them aside. 2. In the same pan add some more oil and heat it well. Now add hing to it. Then add cumin seeds to splutter. 3. Then saute bay leaf, cardamom, clove, black pepper (saabut), cinnamon. 4. In a mixer grinder, grind garlic, ginger, green chilli and onion together. Make a coarse paste. Add this to the pan. Let it cook for few minutes. 5. Meanwhile grind tomatoes into a smooth paste. Add this to the pan and let it cook for 2 mins. 6. Now add all dry spices like turmeric powder, coriander powder, red chilli powder, sabzi Masala, and salt. Mix well and let it cook for few minutes. 7. Add some water according to the required consistency of gravy and give it one boil on slow flame. 8. Now add boiled eggs and cook in covered lid for 3-4 mins on slow flame.
