Well, I'm gradually evolving and making the timeline of this AU, that is, currently they haven't met yet! However, I definitely intend to have the twins meet the Grunkles (Maybe Fiddleford already considered one?) possibly.
But here's a little bit of what I imagine of them getting to know each other:
Mabel would be the person to pull Dipper saying that she had seen a pirate ship, Dipper would be shocked and curious
D: But Dad Bill said they are dangerous and we should avoid them 100%.
M: BUT THEY WERE HUMANS DIPPER! What if you could study with them?! Maybe they're cool! Whatever happens, our parents will look for us and save us!
D: It looks like a suicide plan... *He looks at his diary* But... Maybe this time it will seem safe! Let's try.

Eventually, Stanley notices two children looking for an opening to get onto his ship, he pulls Fiddleford.
S: Nerd, Am I crazy or am I seeing human children trying to get on our ship?
F: WHAT? Human children?! Maybe they are in danger we need to save them!
S: WAIT! URGM! WHAT IF IT'S A TRAP?
Fiddleford manages to get Dipper and Mabel off the boat's dangerous ladder and welcomes them warmly, offering food and medical help if needed. Stamley, on the other hand, is completely paranoid. Those symbols were definitely from Cipher's group, he was looking at them NOW. Anxiously he pulled Fiddleford into the captain's room.
S: They're Cipher's, I'm sure! The clothes look like Ford's! That kid even wears similar clothes!
Fiddleford shivered, he was so worried that his paranoia didn't even make him aware.
F: But they are... They're just kids, Stanley, what if... Can we get them out of this?
S: It's too dangerous, Nerd, we need to get out of here now and get those symbols off them now!
Before he even did anything he could hear, that laugh, that damn laugh. Cipher was already there. They were done.

Attempted to draw an older Dipper within me and @velvetywines human/demon swap AU, in which Bill (born human) becomes Dipper's mentor/found family rather than Ford (a knowledge demon), after Dipper spends the summer at his uncle Fiddleford's cabin out in Gravity Falls.
I gotta say, this one got ahead of me. I didn’t actually draw out an answer, but I did doodle several werewolf Dippers because oh my god it’s the cutest thing. And yes, I’m aware he’s wearing the wrong outfit, but I didn’t notice until way after I drew these two and I like them too much to redraw them.
How would Bill react? I’d imagine he’d have a hard time getting used to having a glorified dog for a son, but ofc he’d still love his lil guy no matter what and take him on lots of walks! :)
I imagine werewolves’ fluff levels and fur lengths are dependent on hair length, hair texture, and body hair. In Dipper’s case, he’s got short but fluffy fur, with a bit more fluff at the top cuz that’s were all his hair is, and it’s patterned similarly to how his hair was dyed.
