𝙂𝙞𝙛𝙩𝙚𝙙 🍔 @black_bear_burger & @eatlebab came together last week for a 1 day collaboration and honestly it was one of the best meals I’ve ever had. The menu was made up of 3 collaboration cocktails, a bunch of small plates, then a kebab and burger. This is the Le Bab Bear Burger. 2 dry aged @aubreyallenbutchers beef patties, cheese, meat butter sauce, smoked bacon, tahini & pickle relish. This was a great twist on an already amazing Black Bear burger. The tahini gives this subtle nutty notes as an aftertaste, and the meat butter sauce enhances the beef so well. Man, I wish this pop up was more than 1 day. The small plates were incredible. The brisket hummus was lethally delicious, the pork shawarma spring rolls had a perfect balance of a crispy outside with a melt in your mouth meaty middle. The smoked lamb shoulder mini bab was giving me insecurities about how I slow cook my own lamb as I NEED this recipe. This is their Dirty Vegan Chilli Cheeseburger kit from their side ting @dirtyveganlondon. For £25 you get 4x vegan patties, vegan American cheese, 4 buns, relish, pickled jalapeños, red onion, jalapeño dressing, and gherkin. 🌶 I LOVED this burger. It has all the ingredients to give it the heatwave we are all experiencing right now without being too spicy. I nearly doubled it up, but I’m glad I didn’t, this was enough on its own. 𝗖𝗼𝗺𝗽𝗹𝗶𝗺𝗲𝗻𝘁𝗮𝗿𝘆 | I’ll be honest, I really wasn’t expecting Dirty Bones to be my favourite DIY lockdown kit, but so far it is. It was no ill feelings toward themselves, but with the likes of Burger and Beyond, and Cheeky Burger, I thought they couldn’t be topped. 🍔 But this has done it, The Mac Daddy kit. Double beef patty, American cheese, short rib, Mac & Cheese. The patties are smashed, so I cooked them for half the recommended time to keep them a little less than medium, and then they’re topped with a beautiful beef short rib which has been marinated in an espresso spiked bbq sauce, and it is BEAUTIFUL. Here’s my tip for you, the instructions say prepare the Mac and cheese first, but I say try and have it so it’s ready at the last moment, you don’t want that cheese sauce to start to congeal, and it will do this the longer it sits, so get it on the burger at the last moment. You do only get 2 burgers in the pack for £25, but honestly that wouldn’t put me off, when you pair this up with the lamb fries, which I’ll post about in a couple of days, you won’t be complaining. Get them for £10 on their own or as part of the £35 Get Down And Dirty kit with 2 Mac Daddy’s and an Old Sokol Fashioned. If you’ve never had them at their restaurant then you are missing out, big time. It’s always the dish that makes me want to go back to Dirty Bones again and again. I was worried that I wouldn’t be able to create the magic exactly the same from home, but it was super easy. 𝗖𝗼𝗺𝗽𝗹𝗶𝗺𝗲𝗻𝘁𝗮𝗿𝘆 | Down at @dirtyboneslondon Soho, every Monday until 26th April, you’ll find the @dirtyveganlondon take over. With a whole menu available you’ve got choice of a load of bites, including Chick’n Nuggets, and if you compare This’s nuggets to McDonald’s, these nuggets have the look and texture more of like a thigh piece, but they were v nice! The buffalo aubergine is an absolute must have, and probably my favourite dish of the night. They come with a beautiful garlic ranch sauce and are cut into big thick chunks. You’ve got 4 burgers, and we went for the Chilli Cheese, which is a @beyondmeat patty with pickled jalapeños, cheese, red onion, and gherkin. The other side of the menu gives you the choice of roast squash & aubergine, cauliflower & waffles, and then the other option that I went for, a Yankee Dog, which is a @movingmountainsfoods dog, sauerkraut, smoked ketchup, and mustard. For the sides, they’ve given a vegan alternative to their Dirty Fries, swapping out the crispy lamb for bbq braised shiitake mushrooms. Even though this dish doesn’t really replicate the lamb, it was VERY good. We also got the Mac & Cheese, but I wasn’t really a fan of this. They use a cashew cheese, but it’s more like a nut sauce than a cheese, so it doesn’t really replicate cheese at all. It was edible, just not to my liking. We then finished off with their soft serve collab with @getdappa, going for peanut butter cup, and fudge brownie. I popped down to @dirtyboneslondon Kensington last night as they’ve just reopened at their original location. Here’s just one half of what I ate 😛. A full pile of Crispy Fried Chicken, coated in a blend of buttermilk and spices, served with a garlic ranch dripping sauce. Cheesy truffle fries, with cheese sauce, cheddar, and Parmesan. Crispy Lamb fries, with sweet miso, red chilli, and jalapeño. That chicken is so crispy! But also perfectly soft inside. The Burger from @dirtyboneslondon. 2 brisket and dry aged steak patties, black treacle bacon, Gorgonzola sauce, pickled jalapeños, baby spinach, chipotle aioli. There’s a great combination of flavours in this burger, especially if you like stuff with a little more heat. Blue cheese is my favourite, and the Gorgonzola is where the strength was in this burger.
