Ingredients: 1 package 8 oz cream cheese, softened. 1 cup heavy cream. 1/2 cup powdered sugar. 1 teaspoon vanilla extract. 1/3 cup lemon curd. 1 cup graham cracker crumbs. 2 tablespoons unsalted butter, melted. Lemon zest for garnish.
Instructions: In a mixing bowl, beat the cream cheese until smooth and creamy. Add powdered sugar and vanilla extract, continue beating until well combined. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture. In another bowl, mix graham cracker crumbs with melted butter to create the crust. Layer the cheesecake mousse and graham cracker crust in serving glasses. Alternate layers until the glasses are filled, ending with a layer of mousse on top. Chill in the refrigerator for at least 2 hours or until set.
