Un-pretty Patty (but pretty delicious) Not the prettiest sight to behold, but soo good! Perfect for this warmer weather. A 1 pound beef patty seasoned with a little salt and pepper and stuffed with mozzarella cheese and jalapeno bits, plus some buffalo and BBQ sauce. A melted slice of aged swiss sits atop the burger. Placed between two lightly grilled slices of toast with horseradish mustard, heavy onion, and a drop of yellow mustard. Garnished with two tangy pepperoncinis. Chicken... Salad? Stir Fry? Breakfast Skillet? Whatever it is sure helped me unwind after a tough hump day at my day job. This was more so just a little cooking therapy for me. Diced chicken cooked in a skillet with peppers, onion, and diced potato. High in flavor with cayenne and various other seasonings, the dish was served over greens and topped with a slice of provolone cheese and a gooey fried egg (which broke a bit... not enough oil in the pan... whoops!) Parmesan Encrusted Steak A chuck tender steak lightly seasoned with pink Himalayan sea salt and black pepper, brushed with red sauce and oil, coated in parmesan cheese (with oregano, basil, and parsley) and cooked a few minutes on each side in some vegetable oil. Served atop a cauliflower vegetable medley. This was soo good! Ash Wednesday Spaghetti This is sort of a tradition. Fasting on Ash Wednesday to begin Lent and then ending the day with a big, satisfying plate of spaghetti. I used angel hair pasta and a jarred sauce but made it chunky style with diced orange bell pepper, onion, tomato, green olives, green onion, jalapenos, and pepperoncinis (plus some seasonings). The other day I made yet another delicious, over-the-top tomato sandwich! Toast, mayo, organic greens, a slice of tomato, some onion, strips of orange bell pepper, a pickle slice, some jalapeno, shredded cheddar cheese, and topped with a pepperoncini. Seasoned with salt and pepper. Chef Geo's First Meatloaf I love meatloaf. I have been craving meatloaf. I decided it was time to do something about it. I made the meatloaf. Following an online recipe, I altered it only slightly. I used bread crumbs instead of oats (oats?? really??) and I added a little Cherry Dr. Pepper to the meat. I also added some minced garlic to the shock of no one. The glaze ontop consisted of ketchup, brown sugar, two kinds of mustard, BBQ sauce, pink Himalayan sea salt, a little bit of mango rum, and a tiny bit of siracha. I also added more ketchup to taste because the glaze in the recipe was sweeter than I preferred. During the last couple of minutes of cooking, I added bits of Vermont sharp white cheddar cheese. I put it on a little early, which meant taking out the meatloaf a little earlier than I was going to but it didn't hurt anything. The meat"loaf" was soft and tender but still solid enough to retain its shape. Dude, for my first time making it... I knocked it out of the park. It was so delicious I had seconds and only stopped because my belly was more than full! Now I have leftovers, which is a beautiful thing. Garnished with parsley. I also sprinkled on some oregano before adding the glaze.
