鯛のアラを使って☆
鯛のでんぶと筍の押し寿司
春の押し寿司に欠かせない でんぶ
鯛のアラを使って 作りました。
ウロコを丁寧に取り 茹でて 骨を取り除いた後 ガーゼに包み 流水で もみ洗いすると 臭みも無し‼︎
酒 砂糖 塩 水で ほぐしながら炒り上げると ふんわりに。
筍と枝豆を混ぜ込んだ寿司飯に でんぶを ふんわり乗せて完成です。
三日前に漬けた さわらの西京漬と甘酢生姜を添えて。
鯛のでんぶも ほんのり桜色に染めて 春の一皿を 楽しみたいなぁ。
