My take on white bean soup
I don’t really like creamy soups. So when the hubs asked for white bean soup, I took it in a different direction.
The result: All four of us found something we liked in this creation.
Here’s how you make it.
Take one pound Italian sausage and cook in some water in skillet until done.
Meanwhile, in your soup pan, brown two cloves chopped garlic with one chopped onions. Then add 1.5 quarts chicken stock, two cans of cannelloni beans (rinsed), one can of diced tomatoes (including the juice) and some dried basil. Bring to a boil.
Once your sausage is cooked, slice it up and add to the soup. Simmer for five more minutes then add about a half a bag of fresh kale. Cook five more minutes until the kale is wilted. Â Salt and pepper to taste.
My whole family liked this. Granted, one kid didn’t eat the beans and one kid didn’t eat the tomatoes. But overall I consider it a victory.

Better than Peter Brady’s pork chops and apple sauce
Just got back from a business trip to New Orleans where I ate my weight in crawfish and decided I wanted to do a simple supper tonight. What I discovered was a really delicious combination.
Those of us of a certain age remember the Brady Bunch episode where Peter wont shut up about pork chops and applesauce. I’ve one upped that. Pork chops and roasted beets.
I made beets because I didn’t have any applesauce. The beets are sweet and this combination is similar to Peter’s favorite - savory and sweet. I used the roasted beet recipe that my daughter Lily loves. They are so delicious - and healthier than applesauce from a jar.
For the pork chops, I dredged them in flour and Old Bay seasoning and fried them in 1/2 cup canola oil and 1 tbsp butter. Super easy and super delicious.

Pizza Balls
Ingredients: 3 cans Pillsbury Buttermilk Biscuits (10 ct) 60 pepperoni slices (2 per biscuit) Block of cheese (Colby/Monterey Jack or Chedder) 1 beaten egg Parmesan Cheese Italian Seasoning Garlic Powder 1 jar pizza sauce Directions: Slice cheese into approx. 28 squares. Flatten each biscuit and stack pepperoni and cheese on top (Like in the picture) Gather edges of biscuit and secure on top of the roll. Line rolls in greased 9x13 pan Brush with beaten egg. Sprinkle with parmesan cheese, Italian seasoning and garlic powder. Bake at 425 degrees F. for 18 to 20 mins. Serve with warm pizza sauce for dipping. ENJOY!! Â
