Ingredients: 1 can chickpeas, drained and rinsed. 2 cups mixed vegetables bell peppers, broccoli, snap peas. 1 onion, sliced. 3 cloves garlic, minced. 1 tablespoon ginger, minced. 2 tablespoons soy sauce. 1 tablespoon hoisin sauce. 1 tablespoon rice vinegar. 1 teaspoon sesame oil. Cooked rice, for serving.
Instructions: In a large pan, heat some oil over medium-high heat. Add the onion, garlic, and ginger, and saut until fragrant. Add the mixed vegetables and chickpeas, and cook until vegetables are tender-crisp. Stir in the soy sauce, hoisin sauce, rice vinegar, and sesame oil. Serve over cooked rice.
