The savory flavors of bacon and cheddar cheese are combined with the sweetness of roasted butternut squash in these delectable biscuits. They are the ideal accompaniment to a brunch or breakfast dish.
Ingredients: 2 cups all-purpose flour. 1 cup roasted butternut squash puree. 1/2 cup cooked and crumbled bacon. 1/4 cup shredded cheddar cheese. 1/4 cup cold butter, cubed. 1/2 cup buttermilk. 1 tablespoon baking powder. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 teaspoon garlic powder. 1/4 teaspoon dried thyme. 1 egg, beaten for egg wash.
Instructions: Preheat your oven to 425F 220C and line a baking sheet with parchment paper. In a large mixing bowl, combine the flour, baking powder, salt, black pepper, garlic powder, and dried thyme. Add the cold cubed butter to the dry ingredients and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs. Stir in the roasted butternut squash puree, cooked and crumbled bacon, shredded cheddar cheese, and buttermilk. Mix until the dough comes together. Turn the dough out onto a floured surface and gently knead it a few times to bring it together. Pat it into a 1-inch thick rectangle. Use a biscuit cutter to cut out biscuits from the dough and place them on the prepared baking sheet. Brush the tops of the biscuits with beaten egg wash for a golden finish. Bake in the preheated oven for 12-15 minutes or until the biscuits are golden brown and cooked through. Remove from the oven and let them cool slightly before serving.
