Champorado for champs! Champorado was my favorite comfort food growing up. On cool overcast days, my grandma would boil some sweet sticky rice and add Hershey's cocoa powder with a ton of sugar and milk. YUM! This explains why I had always wore Sears husky jeans. 😜 I was totally craving this morning so I made a healthier version. Pretty easy actually. Healthy-ish Hash Browns! 🔹3-4 Potatoes cut into 3/4 inch bites.(I hear the redder the better) 🔹Broccoli (cut into flowerettes) 🔹Chicken Andouille Sausage (sliced) 🔹Chopped Onions 🔹2 Tbls coconut oil 🍴🍴🍴🍴🍴 1. Cut the Sausage into 1/4 inch coins and cook on hot pan. Remove from pan once done. 2. Add coconut oil to pan and heat up at higher temp. I used 8-9. 3. Add cut potatoes to coconut oil and brown one side. Once crispy golden brown, turn the potatoes and lower to medium heat. I used 5-6 4. Continue to cook potatoes till about 1/2 cooked. Able to stick fork in it but still not soft. 5. Add broccoli, onions and sausage 6. Continue to stir hash until potatoes are soft enough to cut with a fork. 7. Put in bowl, salt and pepper to taste.
