In 1948 she took New York by storm with Café Nicholson. Reflected seasonality and farm to fork before anyone in America. Another Edna Lewis recipe that graced our table during the Gullah Campfire Supper with Stories and Songs event was her Thin-Sliced Cucumbers with White Vinegar Dressing. “Cucumbers grew abundantly in our garden all summer, and we enjoyed them every day during the season. We always serve them in a very sweet and peppery dressing.” Serves 4-5 3 medium sized cucumbers 1 teaspoon salt 2/3 cup white vinegar 1/2 cup sugar 1 tsp finally cut chervil 1/8 tsp pepper Wash cucumbers, leaving rind on if they have not been sprayed or waxed, and slice very thin with a sharp paring knife. Put the sliced pieces into a deep bowl. Sprinkle them with the salt. Mix a bit and set a heavy bowl on top of the cucumbers with a weight in it so that the cucumbers release their water. Put everything in the refrigerator. After the cucumbers have been sitting an hour or more, remove them from the refrigerator and drain off the water. Mix the vinegar and sugar together until the sugar dissolves. For the Decoration Day Gullah Campfire Supper with Stories and Songs our menu will reflect foods that would have been eaten in the Lowcountry by the United States Colored Troops while in the Beaufort District, middlins or rice grits with meat when available and vegetables from the nearby plantations. The menu will also include dishes prepared using recipes from the cookbooks of Edna Lewis,”the woman some have called the “Julia Child of Southern Cuisine,”. Edna Lewis taught that we should be proud of our food culture, of country life, and living in relationship with the seasons. Black people developed a food tradition that built the southern food culture. “Our condition was different. We were brought here against our will in the millions, enslaved, and through it all established a cuisine in the south…the only fully developed cuisine in the country.” Edna Lewis We will honor Edna Lewis through our cooking for the May event. **Unlike many of her contemporaries, however, Edna Lewis never became a household name. Though she lived well into the dawn of food television and the celebrity chef era, she never had a television show, nor did she peddle her own line of cookware. Perhaps it was due to her unobtrusive demeanor; among those who knew her, she is remembered for her quiet way. More likely, it’s the region of her birth, her race and her proximity to one of the most shameful periods in America’s past that excluded Lewis from a central role in American culinary history. To grapple with Lewis’s life and legacy is to grapple with the South itself.** It's her birthday. This is Grande Dame Edna Lewis. Edna Lewis was born today in 1916 in Freetown, Virginia, a community established by emancipated slaves, including Ms. Lewis’s own grandparents. After a life spent learning to live with and off the land, growing, preserving, and preparing Southern ingredients, Ms. Lewis moved to New York City, where she worked a number of jobs before becoming the chef at Café Nicholson. From that restaurant to her three cookbooks, her intimate knowledge of Southern ingredients and cuisine provide invaluable knowledge that continue to inspire and educate. An Outstanding meal by @wild.grove at @harvestandlight yesterday. Y'all know of my abiding love and loyalty to these good folks. But y'all also know I give no undue praise for haphazard or arrogant cooking. This meal was a love letter to Tasmanian terroir, pleasure, and The Great Edna Lewis. It was the ultimate early Autumn feast. The last of the seasons heirloom tomatoes dressed with silky goat curd, olive oil, and aromatic basil. The fried cauliflower was crispy outside and creamy within punctuated by the bite of the toum and the sass of the pickled onions. The pork tho, gorgeously fried in its own lard, seasoned perfectly, and dressed with sharp pickled apples. The collards were robust and silky in the mouth, and the waffle was shatteringly crisp and generously gooey within. It all ate so well together, nothing getting in the way of one another. The deep dark mousse was the perfect kiss goodnight. Velvety rich and punctuated by the musky sharpness of the berries. Each bite gluten free, satisfying, and comforting. Confident devoted cooking from start to finish. As close to a perfect low country meal as I've ever had. I could forget that I was in Australia. It was reverently seasonal. Technically obedient. And displayed such devoted affection for the meal that binds us together as family. This meal moved me. It showed me how much love and respect these two have for the land they toil, animals they raise, and the foods we love so dearly. I was humbled by the direct line from my table to theirs. I cannot think of any Southerer that I admire who wouldn't have adored this meal. Truly. It showed such Grace. I advise you to get to the next pop-up.
