New umbels of elderflowers are blooming on my tree💮💮💮
a few flowers i found on my walk today: lantana & elderflower.
the lantana flowers are so mesmerizing, it's so easy to get lost in their beautiful design.
elderflower is one of my favorite floral teas for building immunity & fighting sickness that actually has a pleasant fruity taste. it also makes a great syrup, wine or mead!
White Witch's Delight Cake
from The Wondersmith. "I've been conceptualizing this cake for quite some time, and it was really fun to finally put it all together. I hope you enjoy it as much as I did! Little Turkish Delight-inspired gems of elderflower-champagne and rosé-rose gelatin peek out from a soft vanilla mousse, sandwiched by tender sponge cakes. Hoar frost crisps add a pleasant crunch and the whole thing is crowned with an icicle crown made of sugar! It looks impressive, but is surprisingly easy to create. I'll guide you through every step of the process."

I made elderflower cordial for the first time! It was surprisingly easy - for some reason I'd felt a vague air of intimidation around syrups and cordials. It was so simple, and the result is incredibly delicious.
Buoyed by this success, and seeing as there are many elderflowers still to bloom, I might try another experiment next week - rhubarb and elderflower cordial made in the steam juicer.
I also made my first kimchi of 2025, as the weather's starting to be warm enough for it to ferment properly.
...And I have just drawn this sourdough focaccia from the oven, which I will bring to a friend's house this evening as a contribution to dinner.
I've been experimenting with proving dough in a double-greenhouse type situation - I put it in a bowl with a glass lid on, and then put the whole thing in the greenhouse outdoors. It's an efficient approach for those of us with cold houses; even a tiny bit of sunshine keeps the dough very warm.
🌞 Big shout out to the sun for causing elderflowers to bloom, proving my dough, and keeping the kimchi warm enough to ferment. One of the most classic celestial bodies there is. 🌞
