Instructions: Preheat the oven to 350F 175C. In a bowl, mix together sliced apples, brown sugar, and cinnamon. Divide the apple mixture evenly among the tortillas, placing it in the center of each tortilla. Roll up the tortillas and place them seam side down in a baking dish. In a small saucepan, combine melted vegan butter and maple syrup. Heat over medium heat until well combined. Pour the butter-maple syrup mixture over the rolled tortillas in the baking dish. In a small bowl, mix cornstarch with water until dissolved to create a slurry. Pour the cornstarch slurry over the enchiladas. Sprinkle chopped walnuts over the top, if desired.
