The quinoa and black bean casserole in this Southwestern-style dish is full of flavor and protein. You can make this dish ahead of time or for dinner during the week because it's hearty and filling. It's also gluten-free, and using dairy-free cheese makes it easy to make vegan.
Ingredients: 1 cup quinoa, rinsed and drained. 1 15-ounce can black beans, drained and rinsed. 1 cup corn kernels fresh, frozen, or canned. 1 bell pepper, diced. 1 small onion, diced. 2 cloves garlic, minced. 1 15-ounce can diced tomatoes. 1 cup vegetable broth. 1 teaspoon chili powder. 1 teaspoon cumin. 1/2 teaspoon paprika. Salt and pepper, to taste. 1 cup shredded cheese use dairy-free for vegan option. Fresh cilantro, chopped for garnish.
Instructions: Before you start cooking, heat the oven to 375F 190C. Put quinoa, black beans, corn, bell pepper, onion, and garlic in a large bowl. Add the vegetable broth, chili powder, cumin, paprika, salt, and pepper, and mix them in. Put the mixture in a 9x13-inch baking dish that has been greased. Place foil over the whole thing and bake for 30 minutes. Take off the foil and top with shredded cheese. Put it back in the oven for 10 more minutes, or until the cheese melts and bubbles. Add fresh cilantro as a garnish before serving.

This Slow Cooker Pineapple Pork Tenderloin is a delicious and easy dish that's perfect for a busy day. The sweetness of pineapple pairs perfectly with the savory pork, creating a flavorful and satisfying meal. Plus, it's 21 Day Fix approved!
Ingredients: 1 pork tenderloin about 1 lb. 1 cup diced pineapple. 1/4 cup low-sodium soy sauce. 2 tablespoons honey. 1 tablespoon minced garlic. 1 tablespoon minced ginger. 1/4 teaspoon black pepper. 1/4 teaspoon red pepper flakes optional. 1 tablespoon cornstarch. 2 tablespoons water. 1 tablespoon chopped green onions for garnish, optional.
Instructions: Black pepper, red pepper flakes, garlic, honey, and soy sauce should all be mixed together in a small bowl. The pork tenderloin should be put in the slow cooker. Cover the pork with the sauce mix. Put pineapple dices around the pork. Set the cooker to low for 6 to 8 hours or high for 3 to 4 hours. Remove the lid and cook the pork until it is soft and fully cooked. Put the pork and pineapple in a bowl and set it aside after it's done cooking. To make a slurry, mix cornstarch and water in a small bowl. Mix the slurry with the sauce in the slow cooker as you pour it in. Put the lid on top and cook on high for another 15 to 20 minutes, or until the sauce gets thicker. Take the pork tenderloin and cut it up. Serve it with the pineapple and sauce. If you want, you can add chopped green onions as a garnish. Have fun!
