Ingredients: 4 cups mixed greens. 1 cup roasted butternut squash, cubed. 1/2 cup dried cranberries. 1/2 cup candied pecans. 1/4 cup crumbled goat cheese. 1/4 cup balsamic vinaigrette dressing.
Instructions: Preheat your oven to 375F 190C. Toss the butternut squash cubes with a bit of olive oil, salt, and pepper. Roast them in the preheated oven for about 20 minutes or until they are tender and slightly caramelized. In a large salad bowl, combine the mixed greens, roasted butternut squash, dried cranberries, candied pecans, and crumbled goat cheese. Drizzle the balsamic vinaigrette dressing over the salad and toss gently to coat all the ingredients. Serve immediately and enjoy your delicious Autumn Harvest Salad!
