Tarte Flambée with Asparagus (Vegan)
Flammekueche
Flammekueche is a delicious Alsatian specialty. I remember eating one in Strasbourg on a very hot Summer day; but it is particularly delectable in the Winter. Cream, bacon and cheese onto a thinly rolled bread dough, how much better can it get? Oh, I know, have a glass of Gewurztraminer with it! Happy Thursday!
Ingredients (makes 1, serves 2):
1 (231-gram/8-ounce) portion Pizza Dough
3/4 cup crème fraîche or sour cream
1/2 teaspoon freshly cracked black pepper
1/2 large onion
100 grams/3.5 ounces smoked streaky bacon rashers
90 grams/3 ounces Muenster cheese
Preheat oven to 250°C/480°F. Line a baking tray with baking paper; set aside.
On a lightly floured surface, roll Pizza Dough out very thinly, and carefully place it onto prepared baking tray. Generously spread crème fraîche evenly on top. Sprinkle with black pepper.
Finely slice onion, and scatter onion slices all over the cream.
Roughly chop bacon rashers into lardons, and scatter all over as well.
Finally, cut Muenster into chunks and scatter liberally on top.
Place baking tray in the middle of the hot oven, and bake, at 250°C/480°F, 15 to 18 minutes until golden brown and the cheese is bubbly.
Serve Flammekueche hot, with a glass of chilled Gewurztraminer.
Alsatian Flammekueche
Making tarte flambée or flammkuchen today:
It sounds fancy, but it's quite simple. I mostly use a recipe for the base and oven time/temperature. The grocery store had smoked salmon discounted so I'm making the salmon and dill flammkuchen, but caramelized onions are also good.
