Ingredients: 1 can 15 ounces black beans, drained and rinsed. 1 cup frozen corn, thawed. 1 small red onion, finely diced. 1 small red bell pepper, finely diced. 1 jalapeno pepper, seeded and finely diced. 1/4 cup fresh cilantro, chopped. 1/4 cup lime juice. 1 teaspoon ground cumin. 1/2 teaspoon chili powder. Salt and pepper to taste. 1 cup shredded cheddar cheese. Tortilla chips for serving.
Instructions: Put black beans, corn, red onion, red bell pepper, jalapeno pepper, and cilantro in a large bowl. Salt and pepper should be added along with the lime juice and ground cumin.
