Meyer Lemon Cheesecake Bars
Garlic Paste
Like Ginger Paste, making Garlic Paste is very useful when cooking Indian dishes and pickles; but also makes it easier to quickly whip up an, make a marinade, or flavour any soup or stew.
Ingredients (makes 1/4 cup):
1 medium head (about 8 to 9 large cloves) garlic
1 1/2 tablespoon sunflower oil
Peel and halve garlic cloves, and place them in a mortar. First press, then pound and grind with the pestle until garlic is reduced to a paste. Gradually stir in sunflower oil, until well-blended.
Spoon Garlic Paste into a clean, air-tight jar, and close tightly. Keep Ginger Paste up to a month in the refrigerator.
One heaped teaspoon of Garlic Paste can replace a large clove in any recipe.
