The Indian grocery store had a bonkers deal on garlic! I roasted about half of it and my apartment smells unbelievable. I'm excited to make hummus and maybe some kind of stuffed bread......

You basically roast the heads whole, just chopping off the top of each one (to expose the tips of the individual cloves). Then, arrange them in a baking dish, drizzle olive oil and make sure they're well coated, and then cover it all with foil to roast.

I used to squeeze the cloves out individually and then blend them into a paste to freeze in ice cube trays, but then I realized you can just freeze the peeled cloves in a bag, so that's gonna save me a lot of work in the future!
