Sesame Teriyaki Chicken with Ginger Rice
Matar paneer, ginger rice, onion bhaji, garlic naan bread, mango chutney…..
Two days of bento because Friday was the tabling of the National Budget and since I work for a newspaper, it was busy busy busy!
Also, mom had gone out to buy some nice takeout for Friday dinner, only for dad to tell her at the last minute that he wasn't eating at home and so she angrily foisted the roasted chicken she had bought as well as the ginger rice and egg drop corn mushroom soup she has already cooked on me...so I didn't have to order delivery as planned. The egg yolk sadly slipped out in transit lol.
Saturday bento is a potato pumpkin carrot casserole made with pomodoro sauce my favourite local Italian restaurant started selling (yum!) and some processed cheese singles tucked in between and on top because I was low on the good cheese. And leftover hardboiled eggs.

stir fry chicken over a bed of ginger rice
I pretty much improvised this: first you get the rice going, by putting 1/4 teaspoon of ground ginger in a dollop of oil in the pot. let it become fragrant, about 30 seconds, then add 1 cup of jasmine rice and stir so as to coat it. add 2 cups of water and a pinch of salt, let come to a boil then turn the heat down and let simmer for 20 minutes.
meanwhile, in a neighboring pan, heat some oil and place white scallions and minced garlic in the oil. let cook until they become fragrant, 30-60 seconds, then add some chopped chicken. season with salt, pepper, and a touch of ground ginger, and let cook, stirring occasionally until the chicken is browned and cooked, about 5-6 minutes. add 2 heaping tablespoons of peanut butter and 1/4 cup of water to the pan and stir until thick and coating the chicken and scallions.
add green scallions, soy sauce, and butter to the rice, and equally divide between plates. top rice with the chicken, garnish with sesame seeds, and serve!

***ingredients: 1 thumb of ginger, 6 ounces of green beans, 1 teaspoon of garlic powder, 1 tablespoon of cornstarch, 1 1/2 tablespoons of sour cream, 4 tablespoons of katsu sauce, 1 tablespoons of sesame seeds, 1 cup of jasmine rice, 1/2 cup of panko bread crumbs, and 10 ounces of chicken cutlets

***ingredients: 12 ounces of carrots, 1 thumb of ginger, 2 scallions, 4 ounces of bulgogi sauce, 1 1/2 tablespoons of sour cream, 1 teaspoon of sriracha, 1 tablespoon of sesame seeds, 1 cup of jasmine rice, 10 ounces of ground beef, and 1/4 cup of panko bread crumbs
