And I’m enjoying a whisky mac now. Basically a mixture of Scottish whisky and ginger wine. With a homemade ginger and cinnamon biscuit by my mum.

Be honest, this is the best looking glass of ginger wine you've seen all day, ain't it?

My ginger wine was hitting a little too hot for me (it'll mellow some with aging, I'm sure) so I pulled the bottom bit that I had in quart jars and reracked it with a can of peaches.

This was pretty inactive yeast-wise when I bottled it, so I don't think there'll be any more fermenting, but stranger things have been known to happen. It's also in my basement, which is not conducive to the yeasty boys

The plan is that is picks up a fair bit of peach flavor and some sweetness to balance out the heat.

If it doesn't work, then this should still be great as a spritzer.
