A hearty and tasty ham bean soup with carrots and celery for good health. Just right for a cozy, comforting meal.
Ingredients: 1 cup diced ham. 1 cup dried navy beans, soaked overnight. 3 carrots, chopped. 2 celery stalks, diced. 1 onion, finely chopped. 3 cloves garlic, minced. 6 cups chicken broth. 1 bay leaf. 1 teaspoon dried thyme. Salt and pepper to taste.
Instructions: Soak navy beans and put chicken broth in a large pot. Bring up the temperature. Put in ham cubes, celery and carrot cubes, onion slices, garlic minced, a bay leaf, dried thyme, salt, and pepper. Lower the heat, cover, and let it cook for an hour and a half to two hours, or until the beans are soft. Add more broth if needed and stir the food every so often. Before you serve, take out the bay leaf. If you need to, change the seasoning. Enjoy while hot!
