My new obsession: Hearts of Palm pasta. Pappardelle in grass-fed beef ragu.
VEGAN SEAFOOD BOIL EASY RECIPE! After visiting New Orleans I was inspired to veganize a lot of the traditional dishes. Sea food was my favorite type of meat before going vegan so I had to do a seafood boil.
With the unique tastes of basil pesto and tender hearts of palm, this is a delicious take on the classic grilled cheese sandwich. It's served between slices of crusty sourdough bread.
Ingredients: 8 slices sourdough bread. 1 cup basil pesto. 1 can 14 oz hearts of palm, drained and thinly sliced. 2 cups shredded mozzarella cheese. 4 tablespoons butter, softened.
Instructions: On each piece of sourdough bread, put one tablespoon of basil pesto. Spread 4 slices of bread with thinly sliced hearts of palm. Spread out the shredded mozzarella cheese on top of the hearts of palm. Put the last few slices of bread on top of each sandwich, pesto side down, to make sandwiches. Cover the outside of each sandwich with softened butter. Place the pan on medium heat. It will take about 34 minutes per side to cook the sandwiches until they are golden brown and the cheese melts. Take it off the heat and let it cool down a bit before you serve.

For a tasty alternative to regular crab cakes, try these vegan ones. They are full of flavor and great for any event because they are made with hearts of palm and chickpeas.
Ingredients: 2 cups of hearts of palm, chopped. 1 cup of cooked chickpeas, mashed. 1/4 cup of vegan mayonnaise. 1 tablespoon of dijon mustard. 1 tablespoon of Old Bay seasoning. 1/4 cup of finely chopped red bell pepper. 1/4 cup of finely chopped green onions. 1/4 cup of chopped parsley. 1 cup of breadcrumbs. Salt and pepper to taste. 2 tablespoons of olive oil.
Instructions: You can put vegan mayonnaise, Dijon mustard, Old Bay seasoning, red bell pepper, green onions, parsley, breadcrumbs, salt, and pepper in a large bowl. Then add the chopped hearts of palm. Mix everything together well. Little patties should be made from the mixture. Set a pan on medium heat and add the olive oil. Put the patties in the pan and cook them for three to four minutes on each side, until they are golden brown. Serve hot with the sauce of your choice.
This Shrimp and Hearts of Palm Ceviche is a refreshing and flavorful dish perfect for any occasion. The combination of tender shrimp, crunchy hearts of palm, and zesty lime juice creates a burst of tropical flavors that will tantalize your taste buds. Enjoy it as an appetizer or light meal!
Ingredients: 1 lb shrimp, peeled and deveined. 1 cup hearts of palm, sliced. 1 red onion, thinly sliced. 1 red bell pepper, diced. 1 jalapeno pepper, seeded and minced. 1/2 cup fresh cilantro, chopped. 1/2 cup lime juice. Salt to taste. 1 avocado, diced optional, for serving. Tortilla chips optional, for serving.
Instructions: In a large bowl, combine shrimp, hearts of palm, red onion, red bell pepper, jalapeno, and cilantro. Pour lime juice over the mixture and toss gently to combine. Cover and refrigerate for at least 30 minutes to allow flavors to meld. Before serving, season with salt to taste. Serve chilled, garnished with diced avocado and accompanied by tortilla chips if desired.

Dinner 🥘 Recipe: Pan Seared Salmon with Hearts of Palm Linguine. My first time trying Hearts of Palm pasta from @traderjoes. Does it taste like pasta? No. It has more veggie crunch texture.
