belly cut, cured with lots of brown sugar and maple. flowers, too. I'm not sure if the flavor would impart, but lots of lavender, marogold petals, violets. it would be nice, yeah? cold smoked, cherrywood.

thick cut, at least a half inch. would have to braise it slowly to cook through all the way. that's fine, worth the time. sear hard to get a crust.

serve on a blt, thin slices of heirloom tomatoes, arugula microgreens, a nice hearty white bread, lightly toasted, with a thin layer of mayonnaise
