This delightful salad inspired by Jennifer Aniston is made with either bulgur or quinoa, offering a wholesome and refreshing option for a light meal. It's packed with fresh vegetables, herbs, and a zesty dressing that's sure to please your taste buds.
Ingredients: 1 cup bulgur or quinoa. 2 cups water. 1 cup cherry tomatoes, halved. 1/2 cucumber, diced. 1/4 cup red onion, finely chopped. 1/4 cup fresh parsley, chopped. 1/4 cup fresh mint leaves, chopped. 1/4 cup feta cheese, crumbled. 1/4 cup Kalamata olives, pitted and sliced. 3 tablespoons extra-virgin olive oil. 2 tablespoons lemon juice. Salt and pepper to taste.
Instructions: Rinse the bulgur or quinoa under cold water and drain. In a saucepan, bring 2 cups of water to a boil. Add the rinsed bulgur or quinoa, reduce heat, cover, and simmer for 15-20 minutes until cooked and water is absorbed. Remove from heat and let it cool. In a large bowl, combine the cooked bulgur or quinoa, cherry tomatoes, cucumber, red onion, parsley, mint, feta cheese, and Kalamata olives. In a small bowl, whisk together the extra-virgin olive oil, lemon juice, salt, and pepper. Drizzle the dressing over the salad and toss gently to combine.
