I met Andrew Hill last Fall in the Lubbock Arts District manning the pits @hill_barbecue Pop-ups are not one of the easiest things to do week in and week out but he's been doing them around Lubbock for awhile now. When we spoke he mentioned that, "Lubbock is growing." Every time I go back that is absolutely the case. There is always something new. The fame of this pop-up has spread far and wide just like Lubbock is. While I was in line people from as far away as Houston (at least the ones I spoke with) were waiting for the great West Texas BBQ Andrew was offering. The small family business is feeding people on Thursdays and Saturdays and will have Brisket, sometimes Beef Ribs, Pork Ribs, Turkey other meats, beans and a really cool side: cheesey potatoes. You can't go wrong with anything you get here and they keep the line moving pretty quickly. Andrew keeps up with other pitmasters in the area as a source of support. The BBQ family always have each other's backs out here. It is a far cry from the way things used to be when pitmasters were very secretive and didn't want you to know what wood, spices, or even which type of smoker you were using. Things have changed and for the better. Andrew is part of that new generation that believes everyone has a place in the BBQ family and they build each other up.
