A great way to bring hydration to 100% Spelt bread which is easily dry is to add about 5% old roasted bread . It can contain 3X times the weight in water e.g. 50g old bread -150g water. Boiling water of course and add to this the complete amount of salt. Besides the more in water it adds taste depending on the old bread you used.
