Easy Homemade Lemon Curd Recipe - Quick & Delicious
With just ten minutes of preparation, this incredibly simple lemon curd recipe is bursting with zesty lemon flavor. It's ideal as a topping for desserts, as well as for spreading on toast and stuffing pastries.
Ingredients: 4 large eggs. 1 cup granulated sugar. 1/2 cup fresh lemon juice. 1/4 cup unsalted butter. 1 tablespoon lemon zest.
Instructions: Whisk the eggs and sugar together thoroughly in a saucepan. Add the lemon zest and juice and stir. Put the saucepan over low heat after adding the butter. Cook, stirring constantly, until the mixture thickens and coats the back of a spoon, about 5 to 7 minutes. Take it off the stove and give it some time to cool. After transferring the lemon curd to a glass jar or other container, chill it thoroughly in the refrigerator. Serve as a filling for pastries, toast, or scones. Have fun!

Ingredients: 1 cup fresh blueberries. 2 tablespoons maple syrup. 1 tablespoon lemon juice. 1 cup gluten-free granola. 2 cups dairy-free yogurt. 1 cup gluten-free lemon curd. Zest of 1 lemon. Fresh mint leaves for garnish.
