Enjoy the cool tastes of summer with these delicious strawberry peach coconut popsicles. This treat is great for hot days because it has juicy strawberries, sweet peaches, and creamy coconut milk.
Ingredients: 2 cups strawberries, chopped. 2 ripe peaches, peeled and chopped. 1 can 14 oz coconut milk. 1/4 cup honey or maple syrup. 1 teaspoon vanilla extract.
Instructions: In a blender, puree strawberries until smooth. In a separate blender, puree peaches until smooth. In a mixing bowl, combine coconut milk, honey or maple syrup, and vanilla extract. Pour half of the coconut milk mixture into popsicle molds. Top with strawberry puree, filling each mold halfway. Insert popsicle sticks and freeze for 1 hour. Pour remaining coconut milk mixture over the strawberry layer. Top with peach puree to fill the molds. Insert popsicle sticks and freeze for at least 4 hours or until solid. To remove popsicles, run molds under warm water for a few seconds.
