This colorful and tasty skillet bake has spiralized beets, tomatoes, olives, and vegan feta cheese, all of which are inspired by the Mediterranean. This vegan dish is healthy and filling, perfect for a cozy dinner.
Ingredients: 3 medium beets, spiralized. 1 tablespoon olive oil. 1 small onion, diced. 2 cloves garlic, minced. 1 can 14 oz diced tomatoes, drained. 1/2 cup Kalamata olives, sliced. 1 teaspoon dried oregano. 1 teaspoon dried basil. Salt and pepper to taste. 8 oz vegan feta cheese, crumbled. Fresh basil leaves for garnish.
Instructions: Warm the oven up to 190C 375F. A big skillet that can go in the oven should have olive oil in it. Add the minced garlic and diced onion and saut until the garlic smells good. Put in the spiralized beets and cook for 5 to 7 minutes, until the beets get a little soft. Olives, dried oregano, dried basil, salt, and pepper should all be mixed in. For another two to three minutes, cook. Cover the whole thing with vegan feta cheese. Place the skillet in an oven that has already been heated and bake for 15 to 20 minutes, or until the feta is golden and slightly melted. Before serving, sprinkle with fresh basil leaves.
