After being a pure titan, people don't return to the same human body again. They don't have the same body twice, and it shows.

Eren was still determined to stand up for his friends, but after the attack and founding titan he was more angry. The warhammer titan made him more powerful, and it showed. Armin became less unsure after the colossal titan, less feeling. Ymir was less gullible, less trusting, although no one was around to notice.

Pieck, the most noticable, how she seemd to be stuck as the cart titan even in a human form - and for her whole life ilthat never trully went away because sometimes even at seventy she just had to sleep on the floor. Bertholdt used to speak his mind with less fear, but with such a huge weight on him he wanted to make himself as small as possible even if he didn't realise it. Annie's emotions really turned off, before they had a chance to read her but now she was just a blank slate. And Reiner. The memories of the past hit some harder than others, everyone noticed, if they knew or not, how sometimes he was a completely different person and didn't even notice it himself. No one really noticed a difference in Zeke, but if they did they would've seen how he had hated the idea of smoking prior ro getting the beast titan.

They never came back right. It might have something to do with all who came before, all the memories they saw, that in a way this body wasn't just theirs anymore.

But even without the nine titans, they came back different. How Jean and Connie changed, the way Jean could stare at a blank piece of wall for hours if you let him, or how Connie sometimes seemed to be unable to stop rubbing his jaw. Even Levi and Mikasa - they were born in bodies that weren't meant to be theirs - how they would've been more human without it. Some people come back different, but some always were.
