One of the pumpkin dishes I tried last week to bring to Jac's Fall Flannel Party last night! I ended up brining something else (will be on the blog this week 👍🏽) ... but these were a delicious post-dinner fall treat. Pumpkin Ice Cream Fudge Bar Bites 🎃 Mix 3tbsp. Peanut butter, 1/2 banana, 2tbsp. Pure maple syrup, 4tbsp. Unsweetened vanilla almond milk, 1tsp. Cinnamon, 1tsp. Vanilla protein powder (I used vega) in a bowl. Heat 3tbsp. Coconut oil in a pan over medium heat, add 1C. Pumpkin purée and mix for 2min. Add in peanut butter mixture & mix until heated. Transfer to blender, blend and then pour into a greased baking tray.
